Talk in the office this morning has turned to who’s making pancakes tonight given it’s Shrove Tuesday today so we thought it would be fun to share our top 5 recipes to inspire you into some pancake flipping.
First up is this Dutch Baby Pancake by Camille Styles, who describes it as “a cross between a crepe and a popover”. Camille’s recipe advises serving the pancakes with fresh blueberries, blackberries, a squeeze of lemon and of course, maple syrup! Take a look here for the recipe.
We love the sound of this recipe for Sweet Potato and Pea Cakes by Eat & Relish blog. Okay so technically they aren’t exactly a pancake, but they are a great option for a Sunday brunch and sound absolutely delicious.
Next up is this mouth-watering recipe for buttermilk crepes with citrus compote and rosemary honey by food blogger and photographer Katie Quinn Davies who writes the hugely popular What Katie Ate blog.
These Mini Baby Bok Choi Kimchi Pancakes from the Wild Greens and Sardines blog look like they pack a real flavour punch. The recipe also looks surprisingly straightforward and they’ll be ready in less than 20 minutes. What’s not to love?
And lastly, our purchasing manager, Sarah, set a challenge early on in the pancake discussion, find a gluten free and vegan option – the challenge was accepted! Luckily, thanks to Deliciously Ella’s wonderful blog, we discovered these super healthy banana pancakes that are not only vegan, but also gluten free and sugar free. If you’re wondering what on earth is in these beauties, take a look here for the recipe.
