Irresistible Roast Gammon & Grilled Pineapple Salsa

Add a burst of tropical goodness to your roasted gammon with this delectable grilled pineapple salsa recipe. The combination of juicy pineapple, lime and coriander, with a hint of red chilli heat creates a tantalising flavour profile that perfectly complements the savoury gammon. With the fresh zingy salsa, this is a delightful evening meal that is perfect all summer long.

For a full BBQ option, you could choose some gammon steaks and grill these along with the pineapple, which would be quicker than roasting a whole gammon.

Ingredients

  • 1 gammon joint
  • 1 fresh pineapple, peeled, cored, and sliced into thick rings
  • Extra-virgin olive oil, for brushing
  • 1/2 red onion, chopped
  • Juice of 1 lime
  • Sea salt & black pepper
  • 2 tbsp freshly chopped coriander
  • 2 tbsp Mexican Allrounder or similar spice mix
  • Red chilli, chopped (this is quite spicy, use 1/2 for less of a kick!)

Method

Prepare the Roasted Gammon For the best results, use the boil + roast method. Start by boiling the gammon in a large pot of water (keep the skin on but remove the string). Bring the water to a boil, then reduce the heat to a gentle simmer. Once the time is up, remove the gammon from the water and place it on a baking tray. You may want to have some kitchen roll on hand. Remove the skin and season the gammon with spices and herbs. Mexican Allrounder is recommended, but you can create your own blend. 10 minutes before the end of cooking, drizzle some honey or maple syrup over the gammon for a touch of sweetness and a slight glaze. Grill the Pineapple Preheat your grill to medium-high heat. Ensure that the grill grates are clean and lightly oiled. Brush the pineapple pieces with extra-virgin olive oil to prevent sticking and enhance caramelisation. Place the pineapple on the grill and cook for 2-3 minutes per side until beautiful grill marks appear and the pineapple slightly softens. Remove from the grill and let it cool. Prepare the Salsa In a bowl, combine the grilled pineapple, chopped red onion, freshly chopped coriander, lime juice, and chopped red chilli. Season with salt and pepper to taste. Serve and Enjoy Transfer the Grilled Pineapple Salsa to a serving bowl and place it alongside the succulent roasted gammon. Garnish with additional coriander leaves, if desired. Serve the gammon slices with a generous spoonful of the salsa on the side, along with new potatoes and other grilled veggies or salad. NB: Adjust the spice level according to your preference by reducing or omitting the red chilli. Enjoy this tantalising combination of grilled pineapple salsa and roasted gammon, accompanied by the freshness of new potatoes and grilled vegetables or salad.
