We sliced up some courgette, aubergine and red pepper and roasted in the oven at 180C on a fan setting for 20 minutes. Before placing the tray in the oven we drizzled some olive oil and added some sea salt and fresh pepper.
So simple. So fresh. We had some veggies left over which we mixed with some cooked wholegrain rice, basil and toasted pine nuts.
To serve we toasted some sun-dried tomato mediterranean bread – at this point you could rub the bread with some garlic or just top with the roasted veggies and some finely chopped basil, some salt, pepper and a drizzle of extra virgin olive oil. So delicious!
