It’s official: Daylesford Cookery School has finally re-opened which means one thing, amazing organic food! Whilst it may not be completely ‘back to normal’ just yet, you can enjoy a cooking course with an experienced tutor in the same relaxed, fun environment.

To help you on your way, we’ve put together a list of five of our favourite courses coming up this summer, here’s what you need to know…

The ‘market garden gather and cook’ course is a special opportunity to spend a morning exploring and harvesting the freshest, most flavourful crops in season from the Daylesford market garden – a spot that is usually closed to the public.

Here you’ll discover hundreds of different varieties of organic fruit, vegetables and salad leaves all within a 28 acre space. Once the baskets are full, the group will pause for a snack prepared by the Chefs before returning to the cookery school to create a delicious meal from the ingredients picked in the garden. All guided by the talented tutors of course.

If you’d like to master the art of a delicious salad this summer, the ‘Daylesford seasonal salads’ half-day course might the one for you. Inspired by the produce grown at Daylesford all year round, the tutors will teach you some of the best Daylesford recipes using a variety of grains, pulses, seeds, fruit and root vegetables as well as suggestions for other variations of both hot a cold salads, accompaniments, dressings, dips and more.

It’s worth remembering that a barbecue is so much more than a tool to cook meat. ‘Smoke without fire: master the barbecue’ is a full day course that’s designed to both inspire and provide guests with the confidence to take al fresco cooking to the next level.

The tutors at Daylesford will teach you failsafe techniques whether you’re cooking fillet steak, delicate fish, vegetables and even puddings – yes puddings! What’s more is that you will also be shown a number of marinades, salads and accompaniments so you can host like a pro this summer.

Afternoon tea is a real treat no matter the season and Daylesford’s ‘the art of afternoon tea’ course is the perfect way to learn the basics. You’ll start the course with a crisp glass of Prosecco  before being guided through how to make your own afternoon tea display including tarts, cakes, biscuits and savoury treats.

Discover the tastes of Provence a little closer to home with the ‘journey through Provence’ course. Bursting with rich, warm summery flavours, the recipes are created with fresh seasonal ingredients. Many of the fresh ingredients are sourced from the market garden during the summer months as well as ingredients from Daylesford’s sister estate in South of France, Chateau Leoube.
