Easy Squidgy Chocolate Pudding

Possibly the easiest and most delicious pudding to make at short notice and with simple ingredients!

INGREDIENTS

  • 375g fresh medjool dates, stones removed and chopped
  • 100g butter, at room temperature
  • 125g brown sugar
  • 2 eggs
  • 150g self raising flour, sifted
  • 250ml boiling water
  • 2 tbsp cocoa powder, sifted
  • 1 tsp bicarbonate of soda
  • Ice cream or cream to serve

METHOD

1. Preheat the oven to 160°C fan / 180°C static.

2. In a large bowl add the dates, boiling water and bicarbonate of soda in a bowl and set aside for 5 minutes. Once the dates have softened up, add this mixture along with the butter and sugar into a food processor and process until combined well.

3. Next add the eggs, flour and cocoa and process again until well combined.

4. Lastly, divide the mixture between 6 x 10cm Staub minis, place on a large baking tray and cook for 25–30 minutes or until cooked when tested with a skewer. Alternatively, use a Staub 24cm cocotte or similar size dish and make one big one.
