This was one of those recipes that isn’t really a recipe, it’s just some leftovers in the fridge, all cobbled together to make something absolutely delicious! It’s so simple, just new potatoes, cauliflower and red onion. We put the red onion into the baking dish first then added the potatoes and cauliflower. We seasoned well with salt and pepper, drizzle of olive oil and some garlic cloves smashed up. Garnish with red chilli flakes and we added a bit of our favourite Italian salsa verde for a kick.
Roasting is a great way to use up and bring back to life any veggies that are looking a bit sad in the fridge and often taste – as this did – better than a proper recipe. We always try to ensure zero waste in the kitchens at HM and this ended up being a total winner!
